How to hire a private chef

Hiring a private chef is unlike hiring for a restaurant. The kitchen is inside your home, the audience rarely changes, and the role touches family life every day. The successful appointments we see share one thing: the household defined what it actually needed before meeting a single candidate.

Define the role before the search

Start with the shape of the week. How many covers, how many days, and at what level of formality? A household that entertains twice a week needs a different profile from one that wants precise family cooking and a quiet kitchen. Decide whether the role is live-in or live-out, whether it travels, and who the chef reports to.

Dietary requirements deserve the same clarity. Allergies, exclusions, wellness or performance nutrition, and the difference between preference and non-negotiable should all be written into the brief. Ambiguity here is the most common source of early friction.

Assess beyond the tasting

A tasting shows technique on one day. It does not show provisioning judgement, composure when plans change, or how a chef behaves around principals and children. Interview for the daily reality: ask how they plan a week of menus without repetition, how they manage a kitchen budget, and how they have handled a principal's change of mind an hour before dinner.

References matter more in private service than in any restaurant career. Speak to previous households directly where possible, and listen for how the chef left as much as how they performed.

Trial days settle most doubts

A structured trial, two or three days cooking the household's real routine, tells both sides more than any interview. Agree scope, pay and expectations for the trial in advance, so it remains a professional exercise rather than an audition without rules.

Finally, decide quickly. The strongest private chefs are rarely available for long, and a household that hesitates for three weeks usually starts its search again.
